I am inferring that they wished the use of cognac to imply France, rather than elsewhere. The story, as I remember it, was that the heart was preserved in Paris so that it could be returned to Chopin's homeland, Poland. Sounds Hollywood film biography romantic, rather than something which happened, but maybe it did.

The keyboard riff I am hearing in my head ain't Chopin, though but the only place I've heard the slang"'"cherry tops"
